I've sorted out my bills so both have a limit on it, and at that point it started working. I've just tried to replicate the issue and can't which is good and odd at the same time!
Possibly the mod was counting all meats for a butcher forever command when the mod was loaded initially? All seems to be fine now!
@zwejner Are you using any mods that might influence this, or can you test it with only this mod to be sure? For me it does seem to work and a bill only on insect corpses will only count insect meat.

I've set up the first bill with Animal corpses, but not insect corpes.
The second bill is insect corpses only.
The third bill is human corpses only.
And the last bill has all of the corpse types allowed.
Note the final bill count is the sum of the others (141+57+97=295), just like you would expect.
It is working, Insect meat still counts as meat so the non-insect bill is being counted as fulfilled.
This is my only meat locker, and I have 2 bills, one for insect meat (forever) and one for normal meat (limited). Mod is in the bottom of my load order. Also have the mod that treats all animal meat as "meat" so not sure if that is interfering?
