I also like @Trustfall's suggestion of using an RT camera for the screens, I think it would be a nice "touch". I don't have all of those games, but I do have MK2 and could record some "video" for you to use on the screens if you are considering going the RT cam route...

Could you add a RT Camera texture to the monitor? Having the option to show a RT Camera's output on the arcade monitor would be very useful for creating the illusion of a working arcade cabinet. Maybe it could be a body group so it could be turned on and off.
