But it could be that the ore is very deep, 100 meters or deeper. I noticed back in vanilla that the range of the ore detector isn't always reliable; sometimes it shows the ore 10–30 meters out of range, or it doesn't react until it's only a meter away, and then works as intended again with the next ore.
I have three other NPC mods installed: two for space, one for planet, and I also have the spiders, so that's four NPCs.
I chose AWE, because it is very popular mood, that also includes laser weapons, that I needed in this case.
Add far I remember VOID only spawns once in the beginning, so it doesn't matter that much.
For performance reasons, I have to adjust/check the spawn rate, cleanup rate, and weapon release. I've had bad experiences with other NPCs in this regard.

@Archandriel Feel free to remove it. Only one grid uses it and it's not essential.
Also I am struggling to see the planets, should I keep jumping towards Khurakan in hopes of seeing them?
If you don't, you can find them with the same approach mentioned below. Look for hauling missions on economy stations with a very distance destination. Probably more than 50k km.
2 ways come to my mind:
2. Ad Binoculars mod and start searching the sky. You will find them.
2. Find economy station and take haul missions. They often lead you to some other planet. There are economy stations near Khurakan star. You also can go to the Aphus and look for economy stations. Those would be the easiest to find, especially near Kimi and Qun. You also should be able to find datapads here and there with their locations.
To help you start, I can give you location of one economy station near Khurakan.
You won't get more encounters such as the Leviatan. You need some MES mods for this.
