The core gameplay mechanic of this game is very satisfying and engaging, and does a great job at motivating continued play in spite of the horrible flaws of nearly everything else.

Gunplay is neutered and cumbersome to the point where it's unrealistic, which ironically defeats the purpose of it being towards the more realistic end. I assume this was done to promote slower paced gameplay, which would almost be okay if it wasn't for the way the animals behave.

Animal behaviour is extremely poorly telegraphed and lazy, their movement is frustrating to no end due to bumps in the terrain causing them to rapidly shift elevation and heading in a completely unreasonable manner. Sometimes they will detect you through dense foliage a hundred or more meters away and bolt, other times they will stand still oblivious as you sprint around them. They also seem to have learnt what guns are and will immediately run if they catch the slightest glimpse of you aiming at them from across a field.
Tracking these animals can be entertaining but is often made very frustrating by their ability to scale vertical surfaces and teleport when they are offscreen, and sometimes just up and de-spawn if they get too close to water, which takes the breath out of any immersion you try to achieve in this game.

What puts the final nail in the coffin for said immersive experience is the horrendous hit registration system. Looking at your x-ray shot analysis after you've claimed a kill is 7 out of 10 times a painful experience as you see the trajectory of the bullet not only coming from the opposite side of the animal from where you were standing, but also passing through the skull, neck, heart and lungs of an animal only to damage its pelvic area for a low score kill. You can be a perfect shot in this game and it won't make a difference the vast majority of the times as whether or not you actually damage the part you're shooting at and not getting a mere flesh wound between the eyes is a completely random affair.

TL;DR: Game tries to be realistic, fails horribly with ArmA 2 level AI and the worst hitreg I've ever seen. But it looks pretty as hell and the gameplay loop is addicting.
