yeah pretty much the root of the plant mainly, but could also eat the leaves too.

Taro corms are a food staple in African, Oceanic, and South Asian cultures (similar to yams), and taro is believed to have been one of the earliest cultivated plants.

I use to eat a lot of Taro root back in the day, now not so much, in NZ price per kg is like $6-7, personally that's unsustainable in my book.
