usually this happen when there is a bad loading, it then fix itself if you leave and come back and geese reload. can't do anything about that, tried for long time to fix :/
as for pig barking... that's definitly a weird bug, pig should replace cow, so at least, they should "moo" like cow (even tho i put sound to minimum possible to not hear them).
i suppose you have another bug that do something similar that create a conflict with it.
this is an old mod, many new mods similar have come out after, some may do conflict.

some even used the whole mod content without even asking any kind of permission or put any credits anyway.....

simply try open the console and put "help pig", if a pig name appear, then it work (its based on random spawn in replacement of chicken and cow). if not, then its not installed good.
also, its a bit obsolete theses days as all models have been used in others mods like "birds of skyrim" and else. maybe can check theses mods too.
(as far as i know, they are low chance to have conflict with others mods, except mods that change cows and chickens.)
i know how pain it is to lose a mod on workshop, and more specifically when this create an god damn bug that make your steam always trying to download infinitly an inexistant mod (i got this bug for month, i know its pain)
the bug about legs cant be fixed as for now, but its not an common bug, i guess it depend of the game engine, too much geese or pigs can make animation weird bugged, it happen sometime if you want to try to spawn hundreds of draugr some of them can be bugged like that and move idle or sling in the ground like on skateboard. i cant do anything about that. but if you play normally, you shouldnt have this bug at all. i myself have see this bug 2 times for my entire playtime with the mod, 1 when i tryed the mod (so i spawned tons of geese and pigs for test) and others one when i used an weapon that summon chicken.
and yes, legs move, same as head (they are an little bug at the geese neck, because its long neck, but nothing horrible imho), they can walk, laying, eat, run, and even attack :P
i dont think. they spawn only where they are chickens around. so, no, they not spawn in wild. but if you have an mod that add more chicken around, then yes, it will.
as for now, this mod is compatible with all DLCs and all mods that modify chicken spawning
same for pig, they only spawn where cow appear. and yes, i can confirm (its rare btw) its possible that some pigs appear as giant gift (you know, dat guy with tatooed cow that go gift his cow to giant, that cow can be replaced by pig , but a i have say, its rare)
they spawn randomly mixed with vanilla and modded animal (cow, chicken,etc..) you can see multiple goose or pigs as same as you can see none of them or mix of chickens and gooses/ chickens-pigs/ pigs-cow/ chickens-cows-pigs /pigs-chickens-goose-cows,etc....
it work good for me, sometime i got dat animation bug, just a "reload" like i have say and it fix it. i dont know if any other bug create a conflict with it. i think not. the only mod can create bug can be mod that add new meshes/skeleton on the cow/geese. i doubt the mod that modify the spawn make conflict with it, as long its totally random spawn based on vanilla system spawn. any other mod should work normally with "ex: if you have a mod that add an new house/castle with chicken/cow in, the mod work normally and sometime some geese/cow can appear if this mod use vanilla chickens)
i know about the no anim bug, and i frankly cant do anything about this...its sound like a skyrim bug itself, it happen to everybody, in general it just need to go away (other place) and come back for the game reload the place and correct this animation bug. its a shitty bug , i know, i think its a bad load of the meshes/skeleton of the geese ( and pig too) and it need to "reload" for work correctly. sometime it just need to go in an house, then to return go out for fix it, sometime it look like didnt work at all.
the pig use the cow skeleton (its very weird if it use dog anim and sound Oo) , its normal if sometime it use cow sound , we have worked hard with dogtown1 for found a way to change this but its really pain to change sound for special creatures without change the sound for all (only way can be to create specific race for geese/pig, but its totally crazy for this mod). it normally shouldnt use any sound except a little hare sound when you kill the pigs (short little "squick !" sound nice). the cow sound appear sometime with idle, idk how to fix this as long it not use the cow voice at all (probably a script bug on the vanilla game that return the fact the pig use same skeleton/spawn point than the cow)

I thought you might want to know about some bugs that I have found with this mod.
The first time I used it, the pig was not moving it's legs, tail, or feet, and was sliding around on the ground like it was skating. It was also making dog noises and barking like a dog.
I then reloaded my game, and the pig finally started moving it's legs, and tail, and started walking around the right way. However this time it was making cow noises.
Last time I played, the goose was skating just like the pig had earlier. My brother thinks that some of these bugs might be a result of the mod trying to randomize farm animals, because Bethesda didn't tell the game to randomize the farm animals, causing the computer to not math up the right sounds with the right animals. I hope this enformation helps you to improve this mod in the future. I like this mod so I plan to keep using it. Thanks.
Oo...wow i absolutly dont know, i dont know this mod and not use it...i guess yes, the food is based on vanilla food, so it should work as same i guess...test ^^
yes, i have all the dlc and it work good . the mod have been create only with skyrim (no dlc) for maximum compatibility and it is compatible with all the dlc.

it normally should work without heartfire. it just affect heartfire by replace some chicken or cow if you buy some for the new heartfire house. heartfire is not needed as same than dawnguard...dlc is not required for it
