Using a menu with just 1 vegetarian plate (choose the Stuffed Zucchini), 1 meat (Beuf Burguignon) and 1 fish (mussels with potatoes), I asked the chefs to make 3 of their own dishes and just 1 quantity of the dish linked to the chef that's either missing from service (like if they asked the day off) or cleaning the dishes. With the accessibility options active and a dining room set at the minimum you should only need 5 to 7 dishes tops to call it a day and close service.
Again, after 4 days of this, the trophy popped.
I guess it's important to avoid making orange mood due to my own decision. As explained in step 3 random orange mood doesn't matter. But when I assigned cleaning to another chef who seemed fine with cleaning, they sometimes got suddenly frustrated and I couldn't got the achievement. During 10 days my chefs got random orange mood for 3~4 times, but I still got the achievement. So it's totally ok to let the orange mood chef clean and just sit in the chair, as long as you assign the orange mood chef cooking during the service.
I follow step 3, and ignore if a chef is upset from cleaning and keep them sweeping the store before service, and have them cook nothing but their specialty. I even tried to switch the menu around and have that chef cook 2 specialty dishes - and when that didn't work, have the other chef cook 2 specialty dishes. Almost everytime, that chef still has a orange moodlet at the end of the game.
Like this entire achevement is just a mix of bad rng, bugs, and poorly explained mechanics. I wish at the very least it wasn't 10 days because that's way too much time given how long services are even when you trim most customers off + exclusively use the side chefs
At the end of point 5 of this guide, it says, "Sometimes all three chefs will dislike washing the dishes. Bad luck, but it will happen really rarely." I have also confirmed this. The problem is that even if this is rare, there is no way to avoid it. In other words, if it happens on the 9th day, everything will be for naught. In that sense, this game has a big problem.
