Always keep a couple employees ready to level up for a free quest as well, in endgame you'll be mostly idling days anyway so your quests will come naturally during the research grind
I played the game the normal way, until I had over 1 million gold saved up from my two floors full of 4 and 5 star beds. I could see the grind coming so I then basically just deleted the hotel, and crammed down as many researches as I could on those floors, then filled out everything else, every nook and cranny, with tables. At that point you just need to keep doing expeditions for event resources, and host events while your researchers eat away at the required research. I swapped my research around pretty frequently when possible, and for the final 3 tiers I just made sure all 3 had their research completed before selling all research desks, firing all researches, and going all out with tables and bars
The final grind is surprisingly short this way and I didn't mind it at all. It's not an exploit or anything, but holding on to hotels is actually detrimental if you're going for 100%
