TL;DR: The best Star Wars game since KOTOR for me. Best lightsaber combat ever. "Really makes you feel like a Jedi".

Fallen Order is a jack of all trades sort of game. While it doesn't do anything revolutionary, what it does do it does "good enough". A lot of the prerelease information drew comparisons to Dark Souls. While the game does draw heavily from the core Dark Souls formula (bonfires, estus flask, slow/defensive combat) I think it feels closer to a modern melee action game like God of War or Spider-Man. There were some difficult combat areas, and bosses that required repeating a lot to get patterns, but I never felt the difficulty and reward that I felt with games like Dark Souls or Sekiro. All that being said, the Lightsaber combat was fun as hell and I really enjoyed getting the upgrades to make combat more engaging. There was less combat than exploration, but it did ramp up the encounters towards the end of the game to the point that if you hadn't "got gud" by that point, it could be a struggle. Some late game bosses in particular were pretty challenging, but never anything akin to a Dark Souls or Sekiro boss.

The metroidvania aspects of the game were probably the weakest part. The backtracking felt more tedious than fun, since the planets didn't allow for a level design that ever felt as good as the likes of Hollow Knight or Metroid Prime. I did like the individual level design, but some levels felt too large with not enough shortcuts. I think I would have liked a couple more planets but smaller and more focused.

Story was good. I see a lot of complaints about Cal, but I thought he was fine. The actual story beats were just as good as any Star Wars story to me (maybe not as strong as something like KOTOR, but great for a single-player action Star Wars game). A few story beats really stood out to me, and some key moments were pretty powerful in my opinion. There were a few surprises along the way that I really enjoyed as well.

Overall, if I was putting a number on it, I'd say somewhere in the 8.5 to 9 range would be appropriate. It was a great game, with some flaws (and technical hiccups that didn't really bother me much) but I would definitely recommend it to anyone looking for a great Star Wars experience or an action-adventure game.
